What to Eat on a Summer Morning (a.k.a Blueberry Pancakes)

Around this time of the year, our family always seems to have an abundance of fresh blueberries. Pancakes are the perfect way to use up those antioxidant-rich berries.
Note: The berries I use here are wild berries that I picked, and wild+ blueberries = small.

Thought the glare in the background actually makes this look cool.
In a medium-sized bowl, stir together 1-1/2 cups all-purpose flour, 2-1/4 teaspoons baking powder, and 3/4 teaspoon salt.
beat in in 1 cup milk, 2 eggs, and 3 tbsp melted butter.

 

Stir in 1 cup of blueberries (fresh preferred), and 2 tbsp honey (if they're wild, they can be a bit tart)


Pour the amount of batter you would like in circles o n a hot, greased griddle/pan. My pix of this part didn't come out well, so I'm using this via.
When the edges get bubbly, flip. When other side is brown underneath, flip onto a plate.


Devour with maple-surple (oops, i meant syrup) and butter.

End note: I edited all these pictures, got them all pretty, and then when I uploaded them to this post, the Picasa-edits didn't show up! Not sure why, but now you have the (mostly) SOOC pictures!
